Salsa Turkey Meatloaf

I always loved my mom's meatloaf. She made it from scratch. Remember food that was made from scratch? I used to help her mix the ingredients with my hands. That is the most disgusting thing in the world to me, touching raw meat... but that is an entirely different blog post.

We all know how easy it is to order take out or cook up something quick and semi-nutritious (like hot dogs and mac-n-cheese or a frozen pizza). But it's also really easy to make delicious food from scratch. Easy and affordable. You can really stretch your dollars by buying groceries instead of restaurant food. AND... if you're like me and you love to be creative - food is a wonderful medium to work with.

Below is a modification of a very typical meal: Meatloaf. I love to make it interesting by adding things like crushed bagel chips instead of oatmeal or bread crumbs. This is really very simple to make and hey - if you have kids, ask them to help! Get their hands in that raw meat so they can form an opinion of how awesome (or gross) it is!

Pre-heat oven to 350 degrees

SPOONFULS HOT SALSA (see below)
ONE EGG, BEATEN
ONE POUND GROUND TURKEY MEAT
KETCHUP TO TASTE
SALT AND PEPPER AND OTHER SEASONINGS
HANDFUL OF BAGEL CHIPS, CRUSHED

Start with Trader Joe's Hot Salsa (TOMATOES, JALEPENOS, ONION, GARLIC) and add:
MINCED GARLIC
FRESH MUSHROOMS
ONE HALF RED ONION FINELY CHOPPED

Beat egg in a good size mixing bowl. Add thawed ground turkey, mix in salsa and crushed bagel chips, seasonings and a squirt or two of ketchup. Mix with hands or wooden spoon. Form into an American football shape approximately 5 x 3 x 2. Smother loaf with thin layer of ketchup and bake for 45 minutes.

Serve with couscous, steamed veggies and dessert!
